Injera is traditionally made from teff flour, a gluten-free grain native to Ethiopia and Eritrea.

Its distinctive “honeycomb” texture, filled with small holes called ayna (eyes),

is created during the fermentation process and subsequent cooking on a large circular griddle called a mitad.
